This plant only grows in very specific parts of the planet, like for examples some parts of Africa and Valencia. The quality of the ground in the Valencian fields favours the farming and the quality of chufa. The production of horchata has become one of the main economic drivers in the area. For centuries, barracas (a typical Valencian construction in the form of a triangle) and horchaterías (horchata shops whose owners usually make their own horchata) were established around the fields nearby the city.
